On the coast: fish and seafood
Le Marche’s coast is known for its abundance of fresh fish and seafood. Here you can enjoy dishes like ‘Brodetto,’ a local fish soup cooked with tomatoes, garlic, and various seafood such as squid, prawns and mussels. Local fishermen provide fresh fish daily.
Another speciality of the coast is ‘Fritto Misto,’ an assortment of deep-fried fish and seafood served with lemon wedges and a light aioli sauce.
In the Ascoli Piceno region, you will find ‘Brodetto all’Ascolana’. This is a traditional fish stew prepared with different types of fish and seafood, tomatoes, garlic, white wine and peperoncino. It is a tasty dish and a must-try for fish lovers.
Inland: Wine and Truffles and Olive all'Ascolana
This region is also famous for its truffles, especially the white truffles found here. Truffles are often used in pasta and risotto dishes. Truffle hunting is a traditional and activity that nowadays uses truffle dogs. In the past, pigs were used to search for the truffles. But as the pig also liked the truffles, they often ate them when they found them….
Ascolana-Olives: The Undisputed Stars
The most famous delicacy from the Ascoli Piceno region is undoubtedly the ‘Olive all’Ascolana,’ or Ascolana olives. These large green olives are pitted, stuffed with a tasty filling of meat, cheese, herbs and spices, then breaded and deep-fried until crisp and golden brown. They are savoury and delicious, and are often served as an appetiser or street food snack in local ‘tavola calda’ (hot buffets) and restaurants.
In the mountains:
Wildlife and cheese and charcuterie
In the mountainous parts of The Marches, you can enjoy savoury dishes based on local cheeses and game. ‘Pecorino di fossa,’ an aged sheep’s cheese traditionally buried in pits to mature, is a must-try for cheese lovers. It has an intense flavour and a unique texture.
Game meat, such as wild boar and deer, is often prepared in stews and sauces, served with polenta or fresh pasta. The deep, earthy flavours of these dishes are a delight for any foodie.
Another local speciality is ‘Ciauscolo,’ a soft, spreadable sausage flavoured with garlic and peperoncino. Served with freshly baked bread, this is a favourite snack among locals.
In the Ascoli Piceno region, another local culinary highlight is ‘Passatelli,’ a homemade pasta prepared with an unusual but delicious dough based on breadcrumbs, Parmesan cheese, eggs and nutmeg. Often served in a broth, this pasta is a favourite comfort food in the region.
